I like really blistering technical stuff on the whole, but then again sometimes a slower one is nice too. So lately I have enjoyed:
Freebird lol
Yngwie Malmsteen - fire and ice
Dragonforce/Cellador - listening to either of these bands almost guarantees about 6-8 minutes of shredding, and lord knows I love shredding
I also like the blistering technical stuff as well..
Satch - Always With You, Always With Me (I'm gonna go ahead and say I really enjoy most of the stuff he puts out..)
Yngwie is also great.. Hangar 18, Area 51 / Playing With Fire are some I enjoy
On a whole, I usually enjoy the aforementioned artists, Vai, Vinnie Moore, Marty Friedman, especially in Cacophony with Becker (Speed Metal Symphony is insane..)

uncreation - dan swano (not super impressive/fast, but very beautiful sounding)
i could probably come up with hundreds of my favorite solos, but dragonforce, malmsteen, stratovarius, sonata arctica, rhapsody, bodom, falconer are just a few solotastic bands

Symphony X- Out of the Ashes, Sea of Lies, King of Terrors, too many to list.
Rusty Cooley and Francesco Fareri- Mutherfucking shredding at the speed of light.
Cacophony- Anything they played was God-like

I always loved these for some reason but other people didn't agree with me. I thought it was because i was a black dude that mainly listened to rap, but now i have back-up.
I've always enjoyed hendrix a lot in spanish castle magic, but i think that goes to the black thing again and all the weed......whatever though hendrix is the shit.

I don't listen to a lot of metal or the kind of rock where solo's are common place so I'll have to go with Broken Social Scene - Cause = Time. So many great Dream Theater solos, especially from Awake and earlier... I don't think I could choose, but we'll say the solo about 15:40 into A Change of Seasons.
