I didn't find this anywhere I looked (or didn't look hard enough, sorry if it's the latter) but what guage wire should I use? Any certain material better (copper wire) and does the gauge matter?

I use 22AWG stranded. It's easier and more flexible than solid wire.
You couldnot find it because it does not really matter that much.
I'd be surprised if you'd ever had to handle more than 12V/500mA(rather extreme...thats probably what the entire ps3 gets) inside your stick. If you are lost, AWG is just a measure of cross sectional area. Lower the thicker and hence less resistive. Resistance also depends on materialistic properties and copper's resistivity is less than Al and most conductors you will find on the market. Your stick is not going to have a lot of power in it so just use whatever you feel comfortable with. You will know if you need fatter wire when the wire starts getting hotter as soon as you turn it on ^_^
