For a PSone controller, what should I cut off and what should I not cut off. I know the rumble motors aren't needed, but I think I may have accidentally cut off something I shouldn't have. Cause there was a board for the L and R buttons that was also connected to the ground, and then whatever board the analog sticks were connected to and I just noticed I cut both of these things. Anyway to salvage the PCB so I can solder it?

You have to leave the analog board connected otherwise it won't work. The L and R triggers don't matter because you can solder those points on the main board. Check the Padhacking thread, info on this PCB (i assume it's a PSOne H) is in the very 1st post.
