WiiMote + Nunchuck is the way to combine OG control with the New School add ons the WiiMote provides you with. I recommend to everybody try playing this way one time before you dismiss it. This is hands down the best way to play MarioKart Wii.

Wheel is just the fun way to play the game. Just makes WiiMote control a tad easier and you and it's just what the cool kids do. Gets you into the action a little bit more.

GC Contoller and Classic Controller are just OG kart controls. If you played any MarioKart then you've used this control scheme before.

Bikes have better drifting and cornering abilities all karts have over bikes is the ability to gain better mini-turbos. I stopped using karts a while ago cause majoirty of them suck.
