So in 2006, three weirdos sneak into a cemetery with shovels, a crowbar, and a bunch of condoms, and dig up a coffin. But they don't actually open it and they don't actually even see the body, much less have sex with it.

So couldn't they just claim that they were just like grave robbers, and that the condoms were so that they could have sex with each other? The attempted sexual assault (on a dead body) charge seems kinda weak, especially if these guys were willing to admit they were a bunch of homos and the condoms were for the purposes of fucking each other, not the corpse.

I mean...given the same scenario, I'd rather admit I was gay and liked having kinky gay sex in a cemetery, rather than admit I like fucking dead bodies.

The law the prosecutors are using against the three men was created in 1986. At the time of the original trial, prosecutors were unaware that the there was a law covering necrophelia. The law was created to protect against rape/murder victims--its ability to cover necrophelia is a byproduct of the weird wording.
