I noticed in the recent God’s Garden tournament that they split one set-up between 2 screens. Obviously they didn’t system link it, so any ideas how they did this without introducing lag? Especially since both of the players were using HDTV’s (if that even matters)?

Radio Shack sells an amplified (likely less lag) splitter for somewhere around $50. It works with component cables, but not HDMI. They also sell a non-amplified splitter for about $15. Don’t know how well it works, though.
You sure it was a console system and not linked arcade systems? All of the (admittedly few) games I saw were a single 360 system playing over Live.
